: Coconut and Chia Seed Pudding

  • Second course: Banana Bread French Toast
    Grandma’s banana bread coated with organic eggs from a local farm in Abiquiu and served with a whipped fruit butter and Vermont Maple Syrup.

     

  • Third course: Mediterranean Quiche
    A fluffy slice of quiche filled with sun-dried tomatoes, roasted peppers, kalamata olives and onions confit.  Served with a small arugula salad and lacquered bacon.

✦ DID YOU KNOW?

The world’s first Atomic Bomb was detonated on July 16, 1945 on the White Sands Testing Range near Alamogordo. Designed and manufactured in Los Alamos, the area of the first bombing site is today known as the Trinity Site. Back then, many of the people who worked on the bomb at Los Alamos vacationed in Abiquiu and were frequent visitors to Ghost Ranch. They were never allowed to discuss what their occupations were, so everyone always knew they were from the Lab when they couldn’t answer the questions!

  • Second course: Single Sweet Crepe
    Indulge in a single sweet crepe filled with tart lemon, butter and sweet sugar.

     

  • Third course: Mini Green Onion and Gruyére Roll
    Our mini egg and cheese rolls are filled with green onions and gruére cheese, served atop a light salad.

✦ DID YOU KNOW?

Modern Abiquiu is a private village clustered around the historic church of Santo Tomas. The mesa top Pueblo of Abiquiu was established by the Spanish in 1754. The church of Santo Tomas was a mission of the Franciscans that served the first Genizaro (detribalized Native Americans) residents of the village. The Genizaro population of Abiquiu included Pueblo and non-Pueblo people from all over the Southwest who had lost their tribal affiliation through warfare and captivity. In Abiquiu, the Genizaro were Christianized, taught Spanish and given full citizenship under the Spanish Crown. Abiquiu residents were also given a 16,000-acre land grant for grazing and timber use.
